- 2 cups (250g) all-purpose flour
- 1 teaspoon salt
- 1 cup (225g) unsalted butter, cold
- 1/2 cup (120ml) cold water
1. Prepare the Dough:
In a substantial mixing bowl, combine the flour and salt. Cut the chilled butter into small cubes and incorporate it into the flour mixture. Use a pastry cutter or your fingers to work the butter into the flour until the mixture resembles coarse crumbs.
2. Add Water:
Gradually add the cold water, mixing gently until the dough comes together. Be careful not to overwork it; it should be slightly sticky.
3. Chill the Dough:
Shape the dough into a rectangle, wrap it in plastic wrap, and refrigerate for at least 30 minutes. This chilling step is important for the butter to firm up.
4. Roll and Fold:
On a lightly floured surface, roll out the dough into a long rectangle, about 1/4 inch thick. Fold the dough into thirds (similar to a letter) in order to generate layers. This is called a “turn.” Wrap it in plastic wrap and chill for another 30 minutes.
5. Repeat Turns:
Repeat the rolling and folding process two more times, chilling the dough for 30 minutes between each turn. This will create multiple layers that will puff up during baking.
6. Final Roll-Out:
After completing the turns, roll out the dough to your desired thickness for your recipe. It’s now ready to be cut, shaped, and filled as needed.
- Keep everything cold: The key to flaky puff pastry is cold butter and dough. Work quickly to prevent the butter from melting.
- Use a light touch: When rolling out the dough, apply gentle pressure to maintain the layers.
- Don’t skip the chilling: Chilling the dough is essential for the butter to remain solid and for the layers to develop properly.
